Phil and I have been obsessed with this recipe from Italian chef Giada De Laurentiis’s cookbook Everyday Pasta, making big batches for weeknight dinners and taking the leftovers for lunch. The recipe is so simple and makes for a light, lemony pasta dish that can be served by itself or with a side of grilled asparagus, green salad, or both!
You can find the more detailed recipe here, although I would highly recommend getting a copy of Everyday Pasta if you’re looking for a collection of good pasta recipes. I received mine as a wedding gift accompanied by gourmet pastas and jars of pesto and sun-dried tomatoes. Such a clever idea that I will no doubt copy at some point.
