Upon perusal of my recipe posts, I realized that I had yet to post a dessert recipe, which is weird because a) I love to bake, and b) I am a sweets freak and could live off of frosted baked goods (hi, donuts? I’m obsessed). This recipe for lemon cupcakes from allrecipes.com was a major hit with my friends and coworkers. The cupcakes turned out fluffy and moist, and the frosting added just the right amount of sweet, lemony flavor. The only alteration I made was using vegetable shortening in place of butter for the cupcake batter, a trick I learned from my mom to make the cake extra fluffy.
