Vanilla Blueberry Protein Shake

Last week, I received a recipe request for a breakfast food you can take/eat on your way to work. My favorite on-the-go breakfasts are protein shakes – easy to seal up and pack with you or sip from a straw while you’re getting ready in the morning/driving to work. This shake is delicious and packed with protein and nutritious blueberries, AND it’s lactose free. You can easily substitute whatever fruit you like (raspberries or strawberries are also good) or use regular milk if almond milk isn’t your thing.

If you are going to start making protein shakes regularly, then I highly recommend investing in a Magic Bullet. Perfect for one-serving shakes blended right in the cup you’ll be drinking from. It also comes with lids that are great for packing your shake to take to work.  (I also use mine when making a single serving of avocado pasta.)

Vanilla Blueberry Protein Shake
serves 1

1 scoop vanilla whey protein powder (I buy this one in bulk from Costco)
3/4 cup frozen blueberries
1 cup unsweetened almond milk

Blend well and drink up!
